For the Rounds
  • 2 medium Sweet potatoes sliced into ¼-inch rounds
  • 2 tablespoons Olive oil for roasting
  • to taste Salt
  • to taste Pepper
For the Topping
  • 8 oz Brie cheese sliced
  • 1 cup Dried cranberries
  • ½ cup Toasted pecans chopped
Garnish (Optional)
  • to taste Fresh rosemary or thyme

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash, peel, and slice the sweet potatoes into ¼-inch thick rounds.
  3. Arrange the rounds in a single layer on the prepared baking sheet.
  4. Drizzle with olive oil and sprinkle with salt and pepper.
  5. Roast in the oven for 20-25 minutes, flipping halfway through.
  6. Top with brie slices and roast for an additional 5 minutes.
  7. Spoon cranberries onto each round and sprinkle with toasted pecans.
  8. Garnish with rosemary or thyme if desired, and serve warm.
