Directions
  1. Layer Chicken: Start by placing the chicken breasts in a single, even layer at the bottom of your crock pot.
  2. Mix Ingredients: In a medium bowl, combine the rinsed rice, black beans, corn, diced tomatoes with green chilies, chicken broth, taco seasoning, cumin, garlic powder, onion powder, salt, and pepper. Stir until everything is well mixed.
  3. Pour Mixture: Carefully pour the rice and bean mixture evenly over the chicken in the crock pot.
  4. Cook: Cover your crock pot and set it to cook on LOW for 6–7 hours or on HIGH for 3–4 hours.
  5. Shred Chicken: Once cooked, use two forks to shred the chicken right in the crock pot.
  6. Add Cheese: Sprinkle the shredded cheddar cheese evenly over the mixture.
