  • 4 10-inch flour tortillas soft yet sturdy wraps
  • 2 cups shredded cheese opt for Monterey Jack or cheddar

How to Make Shrimp Quesadilla
  1. Heat one large skillet over medium-high heat and add 2 tablespoons of neutral oil.
  2. Add the diced onion and chopped bell pepper to the hot oil. Stir occasionally for 5 to 6 minutes.
  3. Lower the heat to medium, mix in the taco seasoning, and then add the raw shrimp, cooking until opaque.
  4. Remove from heat and drizzle with fresh lime juice, gently mix, and set aside.
  5. In another skillet, heat over medium heat and add ½ tablespoon of butter.
  6. Lay one tortilla flat and spoon around ⅓ cup of the shrimp mixture onto one half, top with ½ cup of cheese.
  7. Cook for about 90 seconds or until the bottom is lightly browned.
  8. Fold the tortilla over the filling and press down to secure.
  9. Flip and cook for another 1 to 2 minutes until the second side is browned. Sprinkle with salt.
  10. Repeat with the remaining tortillas, shrimp filling, and cheese until all are cooked.
  11. Plate the warm quesadillas and serve with your favorite toppings.
