  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Buttermilk
  • 1 cup Hot water
For the Frosting
  • 1 cup Heavy whipping cream
  • 2 cups Powdered sugar
  • 1 teaspoon Vanilla extract
  • 8 oz Cream cheese optional
For the Topping
  • 2 cups Shredded coconut sweetened or unsweetened
  • 1 teaspoon Pink food coloring
  • 1 splash Milk if needed

How to Make Pink Coconut Snowball Cake Bars
  1. Preheat your oven to 175°C (350°F).
  2. Grease and line a 9×13-inch baking pan.
  3. Whisk together flour, cocoa powder, baking powder, baking soda, and salt in a bowl.
  4. Cream the softened butter and sugar until fluffy.
  5. Add eggs and vanilla extract, beating well to combine.
  6. Mix in the dry ingredients alternately with the buttermilk.
  7. Stir in the hot water last to achieve a smooth batter.
  8. Pour the batter into the prepared pan and bake for 25–30 minutes.
  9. Beat cream cheese (if using) until smooth.
  10. Add heavy cream, powdered sugar, and vanilla; whip until fluffy.
  11. Spread the frosting evenly over the cooled cake base.
  12. Place shredded coconut in a bowl.
  13. Add pink food coloring and mix until evenly tinted.
  14. Add a splash of milk if needed to help with the color distribution.
  15. Sprinkle the pink coconut evenly over the frosted cake.
  16. Press lightly to stick the coconut onto the frosting.
  17. Refrigerate for at least 1 hour before slicing into squares.
  18. Cut into neat bars and enjoy chilled.
