Ingredients
  

For the Salad
  • 2 cups Fresh pineapple diced
  • 1 large English cucumber chopped
  • 1/2 cup Red onion finely chopped
  • 1/4 cup Fresh cilantro chopped
  • 1 medium Jalapeño sliced, optional
  • 1/2 cup Feta cheese crumbled, optional
For the Dressing
  • 1/4 cup Fresh lime juice
  • 1 tablespoon Honey or maple syrup
  • 3 tablespoons Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/8 teaspoon Red pepper flakes optional

Method
 

Instructions
  1. Dice the pineapple into bite-sized pieces, and chop the cucumber, red onion, and cilantro. If using, slice the jalapeño thinly. Crumble the feta cheese to have it ready for the salad.
  2. In a small bowl, whisk together the fresh lime juice, honey or maple syrup, olive oil, salt, black pepper, and red pepper flakes until well combined.
  3. In a large bowl, combine your prepared pineapple, cucumber, red onion, cilantro, and jalapeño. Drizzle the lime dressing over the top and toss gently.
  4. Serve the salad immediately or let it chill in the fridge for 15-30 minutes. Garnish with extra cilantro or a squeeze of lime before serving.
