- Dice the pineapple into bite-sized pieces, and chop the cucumber, red onion, and cilantro. If using, slice the jalapeño thinly. Crumble the feta cheese to have it ready for the salad.
- In a small bowl, whisk together the fresh lime juice, honey or maple syrup, olive oil, salt, black pepper, and red pepper flakes until well combined.
- In a large bowl, combine your prepared pineapple, cucumber, red onion, cilantro, and jalapeño. Drizzle the lime dressing over the top and toss gently.
- Serve the salad immediately or let it chill in the fridge for 15-30 minutes. Garnish with extra cilantro or a squeeze of lime before serving.
