Ingredients

For the Steak
  • 1 pound flank steak or sirloin thinly sliced
For the Vegetables
  • 1 medium onion sliced
  • 3 cups bell peppers red, green, yellow, sliced
  • 2 cloves garlic minced
For the Sauce
  • 1/4 cup soy sauce
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes optional
For Thickening
  • 2 tablespoons cornstarch
  • 1/4 cup water for slurry
For Cooking
  • 2 tablespoons olive oil

Equipment

  • Slow Cooker
  • Large skillet

Method

Cooking Steps
  1. Drizzle olive oil in a large skillet over medium-high heat. Allow it to warm before adding the sliced steak for about 2 to 3 minutes, searing until it’s nicely browned but still juicy inside.
  2. Carefully place the seared steak into your slow cooker. Add the vibrant bell peppers, sliced onion, minced garlic, soy sauce, beef broth, Worcestershire sauce, black pepper, and optional red pepper flakes. Stir everything gently to ensure the flavors meld together beautifully.
  3. Cover the Crock Pot and let it work its magic. Cook on low for 6 to 8 hours or choose high for a quicker 3 to 4 hours until the steak is fork-tender and the vegetables are perfectly cooked.
  4. About 30 minutes before serving, whisk together the cornstarch and water until smooth. Stir this mixture into the Crock Pot and let it cook uncovered, allowing the sauce to thicken into a luscious coating for your Pepper Steak.
  5. Once everything is tender and the sauce has thickened, serve your Pepper Steak hot over a bed of steamed rice or noodles.
