How to Make Parmesan Zucchini Rings
  1. Preheat your oven to 200°C (about 392°F). Line a baking sheet with parchment paper.
  2. Slice the zucchinis into thick rounds, about an inch thick. Use an apple corer to remove centers.
  3. Arrange the zucchini rings on the baking sheet. Toss with olive oil, salt, garlic powder, onion powder, Italian herb blend, and grated parmesan until evenly coated.
  4. Spread the seasoned rings out, ensuring they're not overlapping. Sprinkle with extra Italian herb blend, then bake for 20–25 minutes until golden brown and crispy.
  5. Heat a teaspoon of olive oil in a skillet over medium-high heat. Sauté the reserved zucchini centers for 3–5 minutes until tender.
  6. Blend the cooked zucchini centers in a mini food processor with lemon juice, milk, garlic, onion powder, salt, and pepper until smooth.
  7. Serve the warm zucchini rings with the creamy dip on the side.
