How to Make Parmesan Zucchini Rings
- Preheat your oven to 200°C (about 392°F). Line a baking sheet with parchment paper.
- Slice the zucchinis into thick rounds, about an inch thick. Use an apple corer to remove centers.
- Arrange the zucchini rings on the baking sheet. Toss with olive oil, salt, garlic powder, onion powder, Italian herb blend, and grated parmesan until evenly coated.
- Spread the seasoned rings out, ensuring they're not overlapping. Sprinkle with extra Italian herb blend, then bake for 20–25 minutes until golden brown and crispy.
- Heat a teaspoon of olive oil in a skillet over medium-high heat. Sauté the reserved zucchini centers for 3–5 minutes until tender.
- Blend the cooked zucchini centers in a mini food processor with lemon juice, milk, garlic, onion powder, salt, and pepper until smooth.
- Serve the warm zucchini rings with the creamy dip on the side.
