For the Dip
  • 200 g green olives pitted
  • 150 g feta cheese
  • 100 g cream cheese room temperature for easier blending
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic minced
  • 1 no unit zest of 1 lemon
  • 1/2 no unit juice of lemon
  • 1 no unit roasted red pepper chopped
  • 1 tsp dried oregano
  • 1/2 tsp chili flakes optional
  • to taste no unit freshly ground black pepper
For Toppings
  • 2 no unit whole green olives for garnish
  • 1 no unit drizzle of olive oil

Method
 

How to Make
  1. In a food processor, mix together the green olives, feta cheese, cream cheese, olive oil, minced garlic, lemon zest, and lemon juice. Blend until smooth but slightly textured.
  2. Toss in the chopped roasted red pepper, dried oregano, chili flakes (if using), and freshly ground black pepper. Pulse 2-3 times to mix, maintaining some chunks.
  3. Spoon the dip into a lovely jar or bowl. Drizzle olive oil on top and garnish with the two whole green olives.
  4. Allow the dip to chill in the refrigerator for 30 minutes to let the flavors meld together.
  5. Serve alongside pita chips, crostini, or fresh raw vegetables.
