  • 1/4 cup Kalamata olives pitted and sliced
  • 1/4 cup Red onion finely diced
  • 1/4 cup Roasted red peppers diced
  • 2 tablespoons Feta cheese crumbled
  • 2 tablespoons Fresh parsley chopped
  • 2 tablespoons Extra virgin olive oil
  • 1 tablespoon Fresh lemon juice
  • 1/2 teaspoon Dried oregano
  • Salt and black pepper to taste

  • 2 Large ripe avocados

How to Make Mediterranean Tuna Salad Stuffed Avocados
  1. Combine all your tuna salad ingredients in a medium mixing bowl. Gently mix the drained tuna, cherry tomatoes, cucumber, Kalamata olives, red onion, roasted red peppers, feta cheese, and fresh parsley until well blended.
  2. Drizzle with olive oil and lemon juice. Sprinkle the dried oregano, and season generously with salt and black pepper. Fold everything together gently, ensuring all those vibrant flavors meld beautifully.
  3. Slice each avocado in half lengthwise and remove the pit with care. Use a spoon to scoop out a little flesh from each half, creating extra room for that delicious filling.
  4. Dice the reserved avocado flesh and fold it into your tuna salad mixture.
