How to Make Lemon Sugar Cookies
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Whisk together the dry ingredients in a medium bowl: flour, baking soda, baking powder, and salt.
- Cream the butter and granulated sugar in a large bowl until fluffy and pale. Beat in the egg, vanilla extract, lemon juice, and lemon zest.
- Combine the dry ingredients with the wet mixture gradually. Stir until you achieve a soft, slightly sticky dough.
- Scoop tablespoon-sized portions of dough, roll them into balls, and coat each in granulated sugar. Place them on the baking sheets.
- Bake in the oven for 9–11 minutes, until the edges are just lightly golden.
- Cool the cookies on the pan for about 5 minutes before transferring them to a wire rack to cool completely.
