How to Make Lemon Sugar Cookies
- Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
- Whisk together the dry ingredients: combine 2 3/4 cups of all-purpose flour, 1 teaspoon of baking soda, 1/2 teaspoon of baking powder, and 1/2 teaspoon of salt.
- Cream the butter and sugar in a large bowl until light and fluffy. Beat in 1 large egg, 1 teaspoon of vanilla extract, 2 tablespoons of fresh lemon juice, and 1 tablespoon of lemon zest until fully combined.
- Gradually add your whisked dry ingredients to the creamed butter mixture, stirring until a soft dough forms.
- Scoop tablespoon-sized portions of dough, roll into balls, coat with granulated sugar, and arrange on baking sheets.
- Bake for 9–11 minutes or until lightly golden.
- Cool the cookies on the pan for 5 minutes, then transfer to a wire rack to cool completely.
