Preparation
  1. Pound the Aromatics: Start by using a mortar and pestle to pound together the coriander roots, black peppercorns, and garlic until a coarse paste forms.
  2. Mix the Sauces: In a separate bowl, whisk together the Golden Mountain sauce, white sugar, sesame oil, and oyster sauce until the sugar dissolves.
  3. Pulse the Filling: In a food processor, add the ground pork and the seasoning mixture you just prepared, the egg, and cornstarch. Pulse until smooth.
  4. Combine the Ingredients: Transfer the pork mixture into a large mixing bowl. Fold in the crushed aromatics, diced carrot, chopped green onions, and shiitake mushrooms.
  5. Assemble the Dumplings: Take a dumpling wrapper and place it over the back of a tablespoon, spoon in the filling and moisten the edges with water. Fold and pinch to seal.
  6. Prepare the Steamer: Line your steamer basket with parchment paper to avoid sticking.
