For the Casserole
  • 1 pound Italian sausage use your favorite brand, casings removed
  • 4 medium potatoes thinly sliced
  • 1 medium onion sliced
  • 2 cloves garlic minced
  • 1 medium bell pepper sliced
  • 1 can (14.5 oz) diced tomatoes undrained
  • 1 cup mozzarella cheese shredded
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper
  • 2 tablespoons olive oil for sautéing
For Garnish
  • 1/4 cup fresh parsley chopped

Method
 

Cooking Instructions
  1. Preheat the Oven: Start by setting your oven to 375°F (190°C).
  2. Cook the Sausage: In a large skillet, heat olive oil over medium heat. Add the Italian sausage and cook until browned, about 5–7 minutes. Remove from heat.
  3. Combine the Vegetables: In a large mixing bowl, toss together sliced potatoes, onion, minced garlic, sliced bell pepper, undrained diced tomatoes, Italian seasoning, salt, and pepper.
  4. Layer the Casserole: Grease a baking dish and layer half of the potato mixture on the bottom. Add half of the cooked sausage, followed by half of the shredded mozzarella cheese.
  5. Repeat Layers: Add the remaining potato mixture and sausage, finishing with the rest of the mozzarella cheese on top.
  6. Bake the Casserole: Cover with foil and bake for 45 minutes, then uncover and bake for an additional 15–20 minutes.
  7. Garnish and Serve: Remove from oven and sprinkle with fresh parsley before serving.
