How to Make Golden Caramelized Pear & Burrata Towers
- Prepare the Pears: Peel the pears, then carefully core them from the bottom to keep the stems intact.
- Slice the Pears: Cut each pear horizontally into 3 rings.
- Combine Ingredients: In a saucepan, mix together the water, brown sugar, cinnamon stick, vanilla bean, and lemon zest.
- Poach the Pears: Add the pear slices to the saucepan, poaching gently for about 15 minutes.
- Cool the Pears: Remove the pears from the saucepan and let them cool on a plate.
- Prepare the Caramel: In a separate pan, simmer the maple syrup and butter over medium heat until slightly thickened.
- Make the Cream Mixture: In a bowl, combine the torn burrata, mascarpone, and honey.
- Assemble the Towers: Start with a bottom pear slice, add a generous dollop of the cream mixture, place the middle pear slice on top, add more cream, and crown it with the top pear slice.
- Drizzle and Garnish: Drizzle your warm caramel over the assembled towers, then sprinkle with pomegranate seeds, chopped macadamias, and fresh thyme.
- Serve Warm: Enjoy your towers slightly warm or at room temperature.
