For the Meatloaf
  • 1 lb Ground chicken a lean alternative to beef
  • 3 cloves Fresh garlic minced
  • 1 cup Grated Parmesan cheese reserve half for topping
  • 1 cup Breadcrumbs plain or Italian-seasoned
  • 2 large Eggs to hold the mixture together
  • 1 medium Onion diced and sautéed
  • 2 tbsp Soy sauce low-sodium recommended
  • 1 tsp Salt adjust to taste
  • 1 tsp Black pepper freshly cracked

  • 1 tbsp Paprika or Italian seasoning for garnish

How to Make Garlic Parmesan Chicken Meatloaf
  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. Sauté diced onions in a skillet over medium heat until soft, about 5 minutes.
  3. Combine in a large bowl ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until well mixed.
  4. Shape the mixture into a loaf form and place it in the greased baking dish.
  5. Sprinkle the remaining Parmesan cheese on top and add paprika or Italian seasoning if desired.
  6. Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C). Let it rest for 10 minutes before slicing.
