Ingredients
  

For the Meat Mixture
  • 1 lb Ground beef or Italian sausage or turkey for a leaner option
  • 1 medium Onion or shallots for milder taste
  • 2 cloves Garlic fresh or garlic powder
For the Sauce
  • 24 oz Pizza sauce store-bought or homemade
  • 14.5 oz Diced tomatoes or fresh when in season
  • 2 tbsp Italian seasoning or oregano/basil
  • 1 tsp Red pepper flakes optional
For the Pasta and Broth
  • 16 oz Rotini pasta or any short pasta
  • 1 cup Water or beef broth vegetable broth for vegetarian
For the Topping
  • 2 cups Shredded mozzarella cheese or a blend of cheeses
  • 6 oz Sliced pepperoni or turkey pepperoni
To Taste
  • to taste Salt
  • to taste Black pepper freshly cracked
For Garnish
  • to taste Fresh basil or extra Italian seasoning dried basil can work in a pinch

Method
 

Instructions
  1. In a large skillet over medium heat, brown the ground beef or Italian sausage for about 5-7 minutes.
  2. Drain excess fat and add in the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.
  3. Transfer the meat mixture to the crockpot. Add chopped bell pepper, pizza sauce, and diced tomatoes. Stir to combine.
  4. Pour the uncooked rotini pasta into the crockpot and add 1 cup of water or beef broth. Stir thoroughly.
  5. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours. Stir halfway through if possible.
  6. About 15 minutes before serving, sprinkle mozzarella cheese on top and layer with sliced pepperoni.
  7. Cover and cook for an additional 10-15 minutes until cheese is melty and bubbly.
  8. Taste and adjust seasoning with salt and pepper. Serve hot and garnish with fresh basil.
