Ingredients
  

For the Chili
  • 3 pieces Boneless, skinless chicken breasts
  • 1 can Diced tomatoes with green chiles undrained
  • 1 can Whole kernel corn drained
  • 1 can Black beans rinsed and drained
  • 1 packet Ranch seasoning mix
  • 1 teaspoon Chili powder
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • Salt to taste
  • Black pepper to taste
  • 1 block Cream cheese 8 ounces
  • 1 cup Chicken broth
For Garnishing (Optional)
  • Shredded cheddar cheese to taste
  • Fresh cilantro, chopped to taste
  • Green onions, sliced to taste
  • Crushed tortilla chips to taste
  • Sour cream to taste

Method
 

Cooking Instructions
  1. Arrange chicken breasts in the base of the slow cooker.
  2. Add diced tomatoes with green chiles, drained corn, and black beans over the chicken.
  3. Sprinkle the ranch seasoning, chili powder, cumin, garlic powder, onion powder, salt, and pepper on top.
  4. Pour the chicken broth over the mixture.
  5. Place the cream cheese block on top of all ingredients.
  6. Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours.
  7. Shred the cooked chicken directly in the crockpot using two forks.
  8. Stir thoroughly to combine the melted cream cheese and distribute it evenly.
  9. Ladle hot chili into bowls and top with optional garnishes.
