- In a medium bowl, combine the creamy goat cheese, lemon zest, chopped parsley, salt, and pepper. Blend well until smooth and set aside.
- Take a phyllo sheet or spring roll wrapper, and lay it flat on your work surface. Lightly brush it with olive oil or melted butter.
- Place about 1 tablespoon of the goat cheese mixture at one end of the wrapper. Fold in the sides and roll it up tightly. Seal the edges with a little water or egg wash.
- Continue the rolling process with remaining wrappers and filling, ensuring each roll is tightly sealed.
