How to Make Cottage Cheese and Veggie Bake
- Preheat the oven to 350°F (177°C). This ensures your dish starts to cook evenly right from the moment you place it in.
- Whisk together the cottage cheese, eggs, dried basil, dried oregano, salt, and black pepper in a mixing bowl.
- Combine the chopped mixed vegetables and finely chopped onion in a separate bowl.
- Heat olive oil in a skillet over medium heat. Add the mixed vegetables and onion, and sauté for about 3–4 minutes until slightly tender.
- Distribute the sautéed vegetables evenly in the base of a baking dish.
- Pour the cottage cheese mixture over the vegetables and spread evenly to coat.
- Sprinkle shredded cheddar cheese generously over the top, then add breadcrumbs or panko, if using.
- Transfer the dish to the oven and bake for 25–30 minutes or until the cheese is melted and the top is golden brown.
- Allow to cool for 5 minutes before serving warm.
