How to Make Cottage Cheese and Veggie Bake
  1. Preheat the oven to 350°F (177°C). This ensures your dish starts to cook evenly right from the moment you place it in.
  2. Whisk together the cottage cheese, eggs, dried basil, dried oregano, salt, and black pepper in a mixing bowl.
  3. Combine the chopped mixed vegetables and finely chopped onion in a separate bowl.
  4. Heat olive oil in a skillet over medium heat. Add the mixed vegetables and onion, and sauté for about 3–4 minutes until slightly tender.
  5. Distribute the sautéed vegetables evenly in the base of a baking dish.
  6. Pour the cottage cheese mixture over the vegetables and spread evenly to coat.
  7. Sprinkle shredded cheddar cheese generously over the top, then add breadcrumbs or panko, if using.
  8. Transfer the dish to the oven and bake for 25–30 minutes or until the cheese is melted and the top is golden brown.
  9. Allow to cool for 5 minutes before serving warm.

Notes

Ensure your cottage cheese is well-drained to avoid excess moisture in the dish. Always sauté your vegetables just enough to soften them slightly, enhancing their flavor while maintaining some crunch.
