Method
 

How to Make
  1. Preheat your oven to 200°C and line a baking sheet with parchment paper.
  2. Carefully separate the egg whites from the yolks, keeping yolks whole in small bowls.
  3. Whisk the egg whites with a pinch of salt until stiff peaks form.
  4. Gently fold in the crumbled blue cheese and most of the crumbled bacon.
  5. Spoon the egg white mixture onto the prepared baking sheet to form two mounds, creating wells for yolks.
  6. Bake the egg whites for 3 minutes until lightly set.
  7. Carefully slide one yolk into each well of the baked egg whites.
  8. Return to the oven and bake for an additional 3-4 minutes until yolks are just set.
  9. Remove from the oven, top with reserved bacon, black pepper, and chives. Serve immediately.
