How to Make
- Preheat your oven to 200°C and line a baking sheet with parchment paper.
- Carefully separate the egg whites from the yolks, keeping yolks whole in small bowls.
- Whisk the egg whites with a pinch of salt until stiff peaks form.
- Gently fold in the crumbled blue cheese and most of the crumbled bacon.
- Spoon the egg white mixture onto the prepared baking sheet to form two mounds, creating wells for yolks.
- Bake the egg whites for 3 minutes until lightly set.
- Carefully slide one yolk into each well of the baked egg whites.
- Return to the oven and bake for an additional 3-4 minutes until yolks are just set.
- Remove from the oven, top with reserved bacon, black pepper, and chives. Serve immediately.
