Make Cheesecake
- Preheat the oven to 450°F. Line a 7-inch springform pan with parchment paper, ensuring it rises above the rim.
- Beat the cream cheese and granulated sugar together in a large mixing bowl for about 4–5 minutes until smooth and creamy.
- Combine the vanilla extract, citrus zest, and a pinch of salt; mix until evenly blended.
- Pour in the heavy cream and gently mix until the batter is just smooth, being careful not to overmix.
- Add the eggs one at a time, mixing well after each addition until fully incorporated.
- Sprinkle the flour over the batter and gently fold it in until just combined.
- Fold in the berries, keeping them intact.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 20–25 minutes until the top is deeply golden brown and the center has a slight jiggle.
