  • 1 cup Sugar
  • 1 cup Powdered sugar
  • 1 cup Butter, softened
  • 1 teaspoon Vanilla extract
  • 2 large Eggs
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Salt
  • 4 cups All-purpose flour
  • 1 cup Red and green jimmy sprinkles
For the Frosting
  • 2 cups Powdered sugar
  • 1/2 cup Unsalted butter, softened
  • 3 tablespoons Heavy cream (or milk)
  • 1/4 teaspoon Salt
  • 1 teaspoon Vanilla extract

Method
 

Preparation
  1. Preheat your oven to 375°F and spray a 9×13 pan with cooking spray.
  2. Cream the sugar, powdered sugar, and softened butter for about 3 minutes until light and fluffy. Add the vanilla extract and eggs, blending until smooth.
  3. Combine the baking powder and salt, then mix until thoroughly combined. Slowly incorporate the flour and gently fold in the sprinkles.
  4. Spread the cookie dough evenly in the prepared pan. Bake for 12-14 minutes until the edges are lightly golden.
  5. Cool the cookie bars completely in the pan on a cooling rack.
  6. Whip the butter for 2 minutes until creamy, then gradually add powdered sugar, vanilla extract, and heavy cream, adjusting for thickness.
  7. Beat the frosting for 3-5 minutes until fluffy. Frost the cooled cookie bars evenly and top with more sprinkles.
  8. Cut into 24 pieces and enjoy!
