  • ½ cup freshly squeezed lime juice about 4–5 limes

  • 1 small red onion finely diced
  • 1 medium jalapeño or red chilli seeded and finely chopped
  • 1 clove garlic minced
For Flavoring and Texture
  • ½ teaspoon sea salt
  • 1 ripe avocado diced
  • 2 medium tomatoes seeded and diced
  • 1 small cucumber peeled, seeded, and diced
  • 3 tablespoons fresh cilantro finely chopped
To Serve

  • tortilla chips or tostadas optional

Step-by-Step Instructions
  1. Combine shrimp and lime juice in a glass or ceramic bowl. Stir well to coat the shrimp thoroughly. Cover and refrigerate for 30 minutes, stirring halfway through. You'll know it's ready when the shrimp turns opaque and looks cooked.
  2. Add red onion, jalapeño, garlic, and salt to the shrimp mixture. Mix everything well, and allow it to sit for an additional 5 minutes to let the flavors meld together.
  3. Fold in the avocado, tomatoes, cucumber, and cilantro gently. Mix until everything is well incorporated, and taste to adjust salt or chili for your desired spice level.
  4. Serve chilled, garnished with lime wedges for that extra zing. You can also offer tortilla chips or tostadas on the side for a delightful crunch!
