  • 2 tablespoons Olive oil to keep the chicken moist while grilling.
  • 2 teaspoons Ground cumin brings a warm, earthy flavor.
  • 1 teaspoon Ground paprika adds a subtle smokiness.
  • 1 teaspoon Ground turmeric enhances the golden hue.
  • 1 teaspoon Ground coriander offers a citrusy note.
  • 1 teaspoon Ground cinnamon gives a warm sweetness.
  • 2 cloves Garlic, minced for aromatic punch.
  • 1 tablespoon Lemon juice adds freshness.
  • Salt and black pepper to taste.
For the Garlic Sauce
  • 1 cup Mayonnaise acts as a creamy base.
  • 2 tablespoons Minced garlic intensifies the garlicky flavor.
  • 1 tablespoon Lemon juice adds brightness.
  • Salt to taste.

Equipment

  • Grill
  • Non-stick pan
  • large bowl
  • small bowl

Method

Marinating Chicken
  1. In a large bowl, mix olive oil, cumin, paprika, turmeric, coriander, cinnamon, minced garlic, lemon juice, salt, and pepper until well blended. Add the chicken strips, ensuring they are well coated, and marinate for at least 30 minutes, or better yet, overnight.
Cooking Chicken
  1. Heat your grill or non-stick pan over medium-high heat. A light drizzle of oil will help keep the chicken from sticking.
  2. Place the marinated chicken in the preheated surface and cook for about 5-7 minutes on each side until golden-brown and internal temperature reaches 165°F (75°C).
Preparing Garlic Sauce
  1. In a small bowl, whisk together mayonnaise, minced garlic, lemon juice, and a pinch of salt. Adjust garlic to taste.
Serving
  1. Allow the chicken to rest for a few minutes, then slice into bite-sized pieces. Serve with warm pita bread or on a plate, drizzled with garlic sauce and accompanied by fresh vegetables.
