How to Make Carrot Cake Banana Bread
- Preheat your oven to 350°F (175°C) and grease or line a 9×5 inch loaf pan.
- Combine all the dry ingredients (flour, baking soda, baking powder, salt, cinnamon, and nutmeg) in a large bowl.
- Whisk together all the liquid ingredients including mashed bananas, grated carrot, oil, milk, vanilla extract, and maple syrup until smooth.
- Pour the liquid mixture into the bowl with dry ingredients and gently stir until smooth, with a few lumps remaining.
- Transfer the batter to the prepared loaf pan and bake for about 45 minutes or until a toothpick comes out mostly clean.
- Cool the bread in the pan for 5-10 minutes before transferring it to a wire rack for perfect slicing.
