How to Make Caramelized Onion & Bacon Cauliflower Cheese Bake
- Preheat your oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish with cooking spray or olive oil.
- Boil a large pot of salted water and add the cauliflower florets. Simmer for 10–15 minutes until very tender.
- Sauté sliced onions in a skillet with olive oil or butter, adding a pinch of salt. Cook for 10–12 minutes until they soften and turn golden brown.
- Crisp the chopped turkey bacon in the same skillet for about 5–6 minutes until it’s nice and crispy.
- Blend the cooked cauliflower with smoked paprika, garlic powder, salt, pepper, and cream cheese until smooth.
- Mix in the Greek yogurt and most of the cheese, reserving some for topping.
- Combine the caramelized onions, crispy turkey bacon, and green onions into the cauliflower mixture, saving a small portion of each for topping.
- Spread the creamy mixture evenly in the prepared baking dish, then top with the reserved cheese, green onions, and bacon.
- Bake uncovered for 20 minutes or until bubbly and golden.
- Let it rest for a few minutes after taking it out, then sprinkle with extra smoked paprika and green onions before serving.
