Cooking Steps
- Generously season both sides of the chicken breasts with kosher salt and freshly ground black pepper.
- Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and sear for 5 to 6 minutes on each side until golden brown and the internal temperature reaches 165°F (74°C). Remove from the skillet and set aside.
- Reduce the skillet heat to medium. Arrange the sliced tomatoes atop the seared chicken breasts, then layer them with the mozzarella slices. Cover the skillet and cook for 2 to 3 minutes until the cheese is beautifully melted.
- In a small saucepan, combine balsamic vinegar and honey over medium heat. Allow it to simmer for 5 to 7 minutes, stirring occasionally, until it thickens to a syrupy consistency that glistens.
- Sprinkle the torn fresh basil leaves over the chicken, then drizzle the balsamic glaze generously before serving.
