Cooking Steps
  1. Generously season both sides of the chicken breasts with kosher salt and freshly ground black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and sear for 5 to 6 minutes on each side until golden brown and the internal temperature reaches 165°F (74°C). Remove from the skillet and set aside.
  3. Reduce the skillet heat to medium. Arrange the sliced tomatoes atop the seared chicken breasts, then layer them with the mozzarella slices. Cover the skillet and cook for 2 to 3 minutes until the cheese is beautifully melted.
  4. In a small saucepan, combine balsamic vinegar and honey over medium heat. Allow it to simmer for 5 to 7 minutes, stirring occasionally, until it thickens to a syrupy consistency that glistens.
  5. Sprinkle the torn fresh basil leaves over the chicken, then drizzle the balsamic glaze generously before serving.
