- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar in a large mixing bowl until light and fluffy, about 2–3 minutes.
- Beat in the egg, egg yolk, and vanilla extract until smooth.
- Whisk together the flour, baking soda, and salt in a separate bowl. Gradually mix the dry ingredients into the wet ingredients until just combined.
- Scoop the dough into 2-tablespoon balls and place them 2½ inches apart on your prepared baking sheet.
- Mix the cinnamon and sugar together. Press a thumb or spoon gently into the center of each cookie, then sprinkle the cinnamon sugar into the indentation.
- Bake the cookies in the preheated oven for 9–11 minutes, or until the edges are set while the centers remain soft.
- Cool the cookies on the baking sheet for 5 minutes before transferring them to a wire rack.
