How to Make Buffalo Chicken Grilled Cheese
  1. Cook your chicken until it’s no longer pink and easily shreds.
  2. Combine the shredded chicken, Frank’s RedHot sauce, melted butter, softened cream cheese (if using), garlic powder, and black pepper in a medium bowl.
  3. Butter one side of each of your 8 slices of bread.
  4. Layer 4 of the bread slices, unbuttered side up, with a slice of cheese on each.
  5. Spoon the Buffalo chicken mixture evenly among the cheese-topped bread slices.
  6. Drizzle ranch or blue cheese dressing over the chicken mixture if desired.
  7. Cover with the remaining 4 slices of bread, buttered-side up.
  8. Grill the sandwiches in a large non-stick skillet over medium-low heat for 3-5 minutes per side.
