Method
 

Cooking Instructions
  1. Preheat your oven to 350°F. Lightly grease a 6-8 inch oven-safe baking dish or bowl.
  2. Whisk together oat flour, protein powder, baking powder, cinnamon, and salt in a mixing bowl.
  3. Add the large eggs, almond milk, maple syrup, and vanilla extract to the dry ingredients. Stir until smooth.
  4. Transfer the batter to your prepared dish. Spread it evenly across the bottom.
  5. Bake for 18-20 minutes until set and lightly golden. Cool for 5 minutes.
  6. Spread the Greek yogurt over the pancake base.
  7. Warm the peanut butter and drizzle it over the yogurt.
  8. Arrange banana slices on top, drizzle with honey or maple syrup if desired.
  9. Cut into portions and serve immediately.
