- Preheat your oven to 375°F (190°C). Grab a 9-inch baking dish - there's no need to grease it.
- Melt the butter in a large skillet over medium heat. Once it's just starting to bubble, add your sliced bananas. Toss gently for about 1 minute.
- Combine the brown sugar, cinnamon, nutmeg, and salt with the bananas. Stir gently and let it bubble for 2-3 minutes until the sugar melts.
- Remove from heat and stir in the vanilla extract and rum (if using). Pour everything into your baking dish.
- Prepare the Cobbler Topping by whisking together the flour, baking powder, granulated sugar, and salt in a large bowl.
- Fold in the cubed cold butter until the mixture resembles coarse crumbs, then stir in the buttermilk and vanilla until just combined.
- Spoon the topping over the banana mixture in the baking dish. Spread it evenly.
- Bake for 25 minutes or until golden brown and the bananas are bubbling.
