Baking Instructions
  1. Preheat your oven to 375°F (190°C). Grab a 9-inch baking dish - there's no need to grease it.
  2. Melt the butter in a large skillet over medium heat. Once it's just starting to bubble, add your sliced bananas. Toss gently for about 1 minute.
  3. Combine the brown sugar, cinnamon, nutmeg, and salt with the bananas. Stir gently and let it bubble for 2-3 minutes until the sugar melts.
  4. Remove from heat and stir in the vanilla extract and rum (if using). Pour everything into your baking dish.
  5. Prepare the Cobbler Topping by whisking together the flour, baking powder, granulated sugar, and salt in a large bowl.
  6. Fold in the cubed cold butter until the mixture resembles coarse crumbs, then stir in the buttermilk and vanilla until just combined.
  7. Spoon the topping over the banana mixture in the baking dish. Spread it evenly.
