For the Chicken
  • 4 pieces Boneless, skinless chicken breasts
  • 1/2 cup Balsamic vinegar
  • 2 tablespoons Olive oil
  • 3 cloves Garlic minced
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
For the Vegetables
  • 4 cups Fresh spinach wilted
  • 1 cup Cherry tomatoes halved
Optional Topping
  • 1/4 cup Grated Parmesan cheese optional, for serving

Method
 

Directions
  1. Preheat your oven to 400°F (200°C).
  2. Whisk together the balsamic vinegar, olive oil, minced garlic, oregano, salt, and pepper in a small bowl.
  3. Arrange the chicken breasts in a baking dish and pour the balsamic mixture over them.
  4. Bake the chicken in the oven for 20 minutes.
  5. Sauté the spinach and cherry tomatoes in a pan over medium heat for about 3-4 minutes.
  6. Top the baked chicken with the sautéed spinach and tomatoes.
  7. Return the dish to the oven and bake for an additional 10-15 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  8. Optional: Sprinkle some grated Parmesan cheese over the chicken before serving.
