Preparation
  1. Cook the Pasta: Begin by boiling the macaroni according to the package instructions. Drain it well and set aside to cool slightly while you prepare the cheese sauce.
  2. Prepare the Topping: In a small bowl, mix together the panko breadcrumbs, melted butter, and a pinch of salt. Set it aside for later.
  3. Melt the Butter: In a large saucepan over medium heat, melt 4 tablespoons of unsalted butter.
  4. Whisk in the Flour: Add the flour to the melted butter and whisk continuously for about 1-2 minutes to create a roux.
  5. Add the Milk: Gradually pour in the warmed milk while whisking. Continue to stir until the mixture thickens to a smooth, creamy consistency.
  6. Mix in the Cheese: Stir in the gruyere and mozzarella cheeses, along with the salt, garlic powder, onion powder, and mustard powder.
  7. Combine Pasta and Sauce: Gently fold the cooked macaroni into the cheese sauce, ensuring each piece is well-coated.
  8. Transfer to a Baking Dish: Pour the cheesy mixture into a greased baking dish.
  9. Top and Bake: Evenly sprinkle the panko topping over the macaroni. Bake in a preheated oven at 350°F (180°C) for about 25-30 minutes, or until it’s bubbly and golden brown.
