  • ½ cup Light Brown Sugar packed
  • 2 tablespoons Ground Cinnamon for warm flavor

  • 3 medium Granny Smith Apples cored, peeled, finely diced
Glaze
  • 1 cup Confectioners’ Sugar for sweetness
  • 2-3 tablespoons Whole Milk for glaze consistency

Equipment

  • large bowl
  • baking pan
  • pastry brush

Method

Making the Focaccia
  1. Combine the water, sugar, and yeast in a large bowl. Let rest for about 5 minutes until the yeast blooms.
  2. Add half of the vegetable oil into the yeast mixture. Stir gently and set the remaining oil aside.
  3. Mix in the all-purpose flour and kosher salt until combined into a rough dough.
  4. Transfer the dough to a greased bowl and cover it. Let it rise in a warm place for 1 hour or until doubled in size.
  5. Preheat your oven to 450°F.
  6. Pour the remaining oil into a baking pan and brush the bottom.
  7. Spread the risen dough into the prepared baking pan.
  8. Mix melted butter, brown sugar, cinnamon, and vanilla until combined.
  9. Fold the diced Granny Smith apples into the mixture until evenly coated.
  10. Top the dough with a third of the apple mixture. Fold dough edges toward the center.
  11. Flip the dough so the seam side is down and stretch back out towards the pan edges.
  12. Dimple the surface using your fingertips to create deep dents in the dough.
  13. Spread the remaining apple mixture evenly over the top.
  14. Bake for 28-30 minutes or until golden brown and apples are caramelized.
  15. Whisk together confectioners’ sugar and milk until you achieve a pourable glaze consistency.
  16. Drizzle the glaze over the warm focaccia before serving.
