Preparation
- Mix softened cream cheese, powdered sugar, and vanilla extract in a bowl until completely smooth.
- Spread the cream cheese mixture evenly over one side of each tortilla.
- Chop the apple pie filling or cooked cinnamon apples into small pieces and combine with brown sugar, ground cinnamon, and ground nutmeg in a bowl.
- Fill each tortilla by spreading the apple mixture evenly onto half of it and fold the tortillas to form half-moon shapes.
- Melt butter in a skillet over medium heat and cook the quesadillas for 2 to 3 minutes per side until golden brown.
- Slice the quesadillas into wedges and serve warm with powdered sugar or other toppings.

Notes
Be sure to reheat leftover quesadillas in a skillet for best results. For freezing, wrap unfilled quesadillas in plastic wrap and foil and store for up to 2 months.
